Ingredients
60g unsalted butter, room temperature
60g light muscovado sugar
1 large egg, room temperature
30g cocoa powder
60g plain flour
15g Vanilla Caramel Kids Good Stuff or Smooth Vanilla Clean Lean Protein
50g dark chocolate chunks
40g marshmallows
Bonfire Night calls for cosying up around the fire, watching the fireworks and satisfying your sweet tooth. Try these mouth-watering Chocolate S'mores Cookies, packed with nutrients and super easy to throw together.
Method

To a large bowl, add the butter and sugar and cream together until paled and fluffy.

Add the egg and mix again until thoroughly combined.

Add the cocoa powder, flour, Kids Good Stuff/Clean Lean Protein and chocolate chunks and fold until a thick cookie dough forms. Place in the fridge for 30 minutes.

Meanwhile preheat the oven to 180°c and line a large baking sheet with parchment paper.

Roll the cookie dough into 10 small balls and place spaced out onto the baking tray. Press each cookie down slightly with your fingers to form a disc.

Bake for 10 minutes.

Allow to cool slightly, then place marshmallows onto skewers and carefully toast over an open flame.

Use a fork to transfer the toasted marshmallow off the skewers and onto a cookie. Sandwich another cookie on top and enjoy!
