Ingredients
1 ½ cups almond flour
1 cup gluten free flour
1 serve (2 scoops) Clean Lean Protein Smooth Vanilla
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
2 ½ tsp cinnamon
½ cup grated carrot
½ cup grated apple
½ cup crushed pineapple
¼ cup walnut pieces
¼ cup sultanas
¼ cup shredded coconut
zest & juice of 1 orange
1 cup golden brown sweetener (or xylitol + ¼ tsp molasses)
1/3 cup avocado oil
4 eggs
1 tsp vanilla

Method
Preheat the oven to 160 C fan forced or 180 C conventional.
Add all the ingredients (except the orange, golden brown sweetener, avocado oil, eggs & vanilla) to a large bowl & mix well.
Blend the orange, golden brown sweetener, avocado oil, eggs & vanilla together in a blender & pour over all the other ingredients in the big bowl.
Mix well & allow the muffin mixture to stand for 5mins.
Line muffin trays with baking cups/cupcake liners, this recipe makes 12 regular muffins.
Spoon the muffin mixture into the muffin trays & place in the oven for 20-25mins.
*My oven is a hot one. My baking that contains Clean Lean Protein can burn quickly, so I like to bake for half the time & then cover the muffins with a baking tray or foil for the 2nd half of the baking time.
Allow the muffins to cool completely before you eat them.
